This SUPER easy dish is perfect for a cozy night at home. It also makes a great last-minute appetizer for a dinner party. With a buttery crust, earthy mushrooms, and melted cheese, it’s a guaranteed crowd-pleaser!

How It Went

We used store-bought puff pastry (because, honestly, who makes that from scratch?). Then mixed baby bellas with chestnut mushrooms for more texture and flavor, and used mozzarella as the recipe directed. We added thyme just to add another flavor in. Next time? We’re adding onions to the mushrooms. And playing with additional cheeses like Asiago or Parmesan for even more flavor. It’s topped with drizzled olive oil, but balsamic glaze or hot honey would be 😙🤌 [chef’s kiss] . This is a flexible recipe that can take changes, so make it your own.

Our tips: First – eat it warm, or reheat if needed. Eating it cold is not as yummy. Second, sip a glass of the wine you bought for the recipe while you wait for the pastry to cook and/or the mushrooms to simmer. 😄(You have a whole bottle of it, right?) Always cook with wine that you would also drink. Because if you wouldn’t drink it…think about the flavors it’s adding to your food.

Wine Pairing: Fresh and Crisp

We paired it with a white wine. Pick a crisp Sauvignon Blanc or Albariño. The citrusy, fresh notes balance the rich flavors perfectly. Plus, the recipe uses a dry white wine. If you had other uses for the white wine, and want red – try a Merlot. Especially since National Merlot Day was a few days after making this (Thursday November 7).
