What Makes A Great Pizza? (plus-pair it with rosé)

It’s #NationalPizzaWeek and OF COURSE we are celebrating pizza. 🥳

But it’s best at home when you pick your toppings and your beverage pairing.

First, let’s settle a few things.

TL;DR. All pizzas are great.

  • There are no bad pizzas. Misshapen, slightly burnt…all are still delicious. Stop arguing about the details.
  • Toppings: Do what you want. We don’t use pineapple (the Italians can perhaps convince us otherwise?). But there are no bad pizzas.
  • Crusts: deep-dish, Neapolitan, NYC slice, etc. All of them work depending on your mood. At home, it’s easiest to do a simple regular crust. There’s only one pizza dough recipe we use for reliability. Make your own dough so you get what you want. It’s quick but worth it.

How It Went

Sticking with dough for a minute (see what I did there?). For pizza, we vary between oven baking and using pizza stones on the grill. And the struggle to get pizza off the pizza peel is real. So I consulted with friends (and pizza experts! they have a super-secret dough recipe I can’t pry out of them). For a firmer pizza crust, I use one-third semolina flour in the dough recipe. And I use semolina and parchment to get it off, but we’re still perfecting the process. If we oven-bake it – it is prettier. But without the char on the crust that I adore. You can see the difference in oven-baked versus grilled below.

Wine Pairing

It’s winter and it’s pizza. Who says pair it with rosé? We do! Rosé is not just for summer. Washington rosé is one of my year-round favorites. Ours was full of herb and floral flavors. It wasn’t the light ‘pink water’ of summer. But it sure made us happy.
